  • Bring a large pot of water to a boil. Cut the broccoli into small florets and mince the garlic.
  • Cook the fresh pasta in boiling water until just al dente. Add the broccoli florets for the final 3–4 minutes so they become tender. Drain (reserve a splash of the cooking water if desired).
    Fresh Pasta: 500 g
    Broccoli: 300 g
  • Meanwhile, heat the olive oil in a large pan over medium-low heat and gently sauté the garlic for 1–2 minutes until fragrant (do not brown).
    Olive Oil (EV): 2 tbsp
    Garlic: 2 cloves
  • Add the drained pasta and broccoli to the pan and toss with the garlic oil. Off the heat, stir in the cheddar until melted and creamy, loosening with a little cooking water if needed. Season with black pepper and serve hot.
    Cheddar Grated: 150 g
    Black Pepper: 0.5 tsp
