  • Prepare the béchamel sauce. In a small saucepan, melt 20g butter over medium heat. Add 20g flour and stir for 1 minute until it forms a paste. Gradually pour in 180ml milk, whisking continuously. Cook until thickened and smooth, about 2-3 minutes. Season with a pinch of salt and 1/4 teaspoon black pepper. Remove from heat and stir in 30g grated parmesan cheese until melted.
    Butter: 20 g
    Black Pepper: 0.25 tsp
    Parmesan: 30 g
    Flour: 20 g
    Milk: 180 ml
    Salt: 1 pinch
  • Assemble the sandwiches. Take 4 slices of bread and lay them flat. On 2 slices, spread a tablespoon of béchamel sauce. Add 2 slices of cooked ham to each. Top with 30g grated cheddar cheese, then sandwich with the remaining 2 slices of bread. Spread the remaining béchamel on top of each sandwich and sprinkle with the rest of the cheddar cheese.

  • Bake the sandwiches. Preheat the grill (broiler) to high. Place the sandwiches on a lined baking tray and grill for 4-5 minutes or until golden and bubbling on top.
  • Fry the eggs. While the sandwiches grill, melt a little butter in a nonstick frying pan over medium heat. Crack in 2 eggs and fry until the whites are set but the yolks are still runny.
    Eggs: 2 eggs
    Butter: 10 g
  • Finish and serve. Place a fried egg on top of each sandwich and serve immediately. Optionally, sprinkle a pinch of black pepper on the eggs before serving.
