  • Finely slice the shallots, garlic, green chillies, ginger, and the white part of the lemongrass. Zest and juice the lime. Roughly chop coriander and Thai basil leaves.
    Chillies: 1 chilli
    Garlic: 2 cloves
    Thai Basil: 10 g
    Shallots: 2 shallots
    Lemongrass: 10 g
    Coriander: 5 g
    Lime: 1 lime
    Ginger: 15 g
  • Heat olive oil in a pan over medium heat. Add the shallots, garlic, chillies, ginger, and lemongrass. Sauté for 2-3 minutes until fragrant and soft.
    Olive Oil (EV): 10 ml
  • Add coconut milk, fish sauce, lime zest and juice, salt, and black pepper to the pan. Stir and simmer for 5 minutes to blend the flavors.
    Coconut Milk (tinned): 400 g
    Fish Sauce: 10 ml
    Black Pepper: 1 g
    Salt: 2 g
  • Gently nestle the cod fillets into the sauce. Cover and cook for 7-8 minutes, or until the fish is opaque and flakes easily with a fork.
    Cod Fillets: 300 g
  • Serve the cod in shallow bowls, spooning over the coconut and lime sauce. Top with chopped coriander and Thai basil. Serve with extra lime wedges on the side.
