  • Preheat oven to 200°C (400°F). Line a baking tray with parchment or foil.
  • In a small bowl, whisk together the olive oil, lemon zest, juice of half a lemon, minced garlic, chopped dill, chopped parsley, salt, and black pepper.
    Olive Oil (EV): 1 tbsp
    Lemon: 0.5 lemons
    Garlic: 1 tsp
    Dill: 1 tbsp
    Parsley: 1 tbsp
    Salt: 1 pinch
    Black Pepper: 1 pinch
  • Place salmon fillets skin-side down on the tray. Spoon the lemon-herb mixture over the top. Bake for 10–12 minutes, until just opaque and flakes easily with a fork.
    Salmon Fillet (skin on): 2 fillets
  • Rest for 2 minutes, then serve.
