  • Pat scallops very dry with paper towels. Season both sides with salt and black pepper.
    Salt: 2 pinches
    Scallops: 8 scallops
    Black Pepper: 1 pinch
  • Heat a large skillet over medium-high until hot. Add olive oil and heat until shimmering.
    Olive Oil (EV): 1 tbsp
  • Add scallops and sear without moving until deep golden, about 2 minutes. Flip, add butter, and baste while searing the second side for 1–2 minutes until just opaque.
    Butter: 1 tbsp
  • Remove from heat. Squeeze lemon over scallops and sprinkle with chopped parsley. Serve immediately.
