  • Poach or cook the chicken breasts until cooked through, then allow to cool and chop or shred into bite-sized pieces.
    Chicken Breasts: 2 breasts
  • In a bowl, mix the mayonnaise, yoghurt, curry powder, a squeeze of lemon juice and a pinch of salt. Taste and adjust seasoning if needed.
    Yoghurt: 2 tbsp
    Lemon: 0.25 lemons
    Curry Powder: 1 tsp
    Mayo: 2 tbsp
    Salt: 1 pinch
  • Add the cooked chicken to the sauce. Stir in the chopped apricots and sultanas. Optionally, add a small handful of flaked almonds for crunch.
    Sultanas: 20 g

  • Mix everything thoroughly and serve with salad leaves, or in sandwiches, wraps, or with rice, as preferred. Optionally, garnish with coriander.
