  • Spiralize the courgettes into noodles and pat dry with paper towels to remove excess moisture.
    Courgette: 2 courgettes
  • Heat olive oil in a large pan over medium heat. Add minced garlic and chilli flakes and cook for 30–45 seconds until fragrant.
    Olive Oil (EV): 1 tbsp
    Chilli Flakes: 0.5 tsp
    Garlic: 2 cloves
  • Add the prawns and season with salt and black pepper. Cook 2–3 minutes per side until pink and opaque.
    Raw Prawns: 300 g
    Salt: 1 pinch
    Black Pepper: 1 pinch
  • Add the courgette noodles to the pan and toss for 1–2 minutes to warm through. Finish with lemon juice and parsley, toss, and serve immediately.
