  • Heat 1 tablespoon of olive oil in a large pan over medium heat. Add 1 finely chopped onion, 1 finely chopped carrot, and 1 finely chopped celery stick. Cook for 8-10 minutes until softened.

    Olive Oil (EV): 1 tbsp
    Onion: 1 onion
  • Add 2 cloves of finely chopped garlic and cook for 1 minute until fragrant.

  • Add 250g beef mince and cook, breaking up the meat, until browned.
    Beef: 250 g
  • Stir in 1 tablespoon tomato paste and cook for 2 minutes.
    Tomato Paste: 1 tbsp
  • Pour in 100ml red wine and simmer for 3-4 minutes until reduced.
    Red Wine: 100 ml
  • Add 1 can (400g) chopped tinned tomatoes, 1 teaspoon dried oregano, and a pinch of salt and black pepper. Mix well.

    Black Pepper: 1 pinch
    Oregano: 1 tsp
    Tomatoes (tinned): 400 g
  • Reduce the heat and simmer, partially covered, for 30-40 minutes, stirring occasionally.
  • Meanwhile, cook 160g spaghetti according to the packet instructions. Drain.

  • Serve the sauce over the spaghetti, topped with grated parmesan (optional).
