  • Rinse the cod fillets, pat them dry, and cut into large chunks. Set aside.
    Cod Fillets: 300 g
  • In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
    Onion: 1 onion
    Garlic: 10 g
    Olive Oil (EV): 2 tbsp
  • Add diced tomatoes and sliced peppers to the pot. Season with salt, black pepper, and bay leaf. Cook for 5 minutes, stirring.

    Bay Leaves: 2 leaves
    Black Pepper: 2 g
    Tomatoes: 200 g
  • Stir in drained haricot beans and pour in the fish stock or water. Bring to a simmer and cook for 10 minutes.
    Fish Stock: 300 ml
    Haricot Beans: 265 g
  • Nestle the cod chunks into the stew. Cover and simmer gently for 10-12 minutes, until the fish is cooked through and flaky.
  • Stir in chopped coriander and adjust seasoning to taste. Serve hot, garnished with extra coriander and a wedge of lime.
